Week One
Two new recipes and will post them!
1. Pasta and Bean Salad Yummy!
Toss chopped green onion, tomatoes, 1/4 cup black beans and 1 cup whole wheat pasta with 2 tsp olive oil. Flavour with your favorite spices. I used a tex mex combination by club house. Put on top of a bed of lettuce greens mixed with grated carrot and green peppers. Top with 1 oz grated light mozzarella cheese. All the veggies were free, the pasta, beans, oil and cheese add up to 8.5 points per huge serving. You could keep it a little lower by leaving the cheese out but I had the points so I used them
2. Michelle's Taco and Cabbage Bake
Brown 1 lb hamburg. Drain and rinse. Add chopped onion, green pepper, garlic, 1 pkg taco seasoning, 4 cups shredded cabbage, 1 can tomatoes, 1 cup tomato juice, 1 can black beans and 1/2 cup of rice. Mix well and put in casserole dish, cover and bake at 350 for 1 hour. Top with a dab of fat free sour cream. This made 8 very big servings at 6 points each....was very filling
Done eating by 8 pm!
