Hello again!

Mary, I haven't tried the Quinoa but I have been wanting to, being honest, I didn't change my cooking style too much, I did lesson oils and the fats, and use whole wheat pasta's LOTS of veggies and portion control. I think you are right with the beans though, I have incorporated more beans into my diet, not only are they high in fiber and protein but they help lower LDL (the bad cholesterol) One thing I like alot is, I take whole wheat spaghetti, I take a skillet full of stir fry frozen veggies fry those up in some cooking spray, add all my seasonings like garlic powder, salt, pepper, crushed red pepper, and anything you would like, I mix the pasta and the veggies together, around 4 tbsp of evoo and 4 tbsp of parmesan cheese mix it up and I serve it with some grilled chicken ... everyone loves this and it is SO easy, you can replace the grilled chicken with some rotiserrie chicken, easy fast and healthy, and I bet the quinoa could replace the ww spaghetti Good for you for going to that Anne Rice book signing, I was wondering if you went, that will be a great memory for you and Erin!

Sara is so happy today, she got nominated by her teachers to be on the renissance team, she will mentor the freshman coming in, only a special few get this honor so she is very excited, I'm so proud of her that means she is doing well in school

Gotta run, my 12th grade neighbor needs to use the computer to type something, I guess I'll let her have it now! since it is her homework
