Hi everyone,

Somehow I never get even close to getting everything done that I plan on doing but I did clean the kitchen and I did cook the seafood.  When it was time to make dinner I decided I didn't want another week of eating rice so I took a recipe for Linguine and Seafood and made whole wheat Penne and the Seafood dish.  It was spicy and good.  I cooked garlic and red onion in a little EVOO with paprika, red chili pepper flakes, tarragon, Italian herbs, and Bay leaves and then I added a can of tomatoes and some tomato paste, added chunks of fresh salmon, then added mussels on the half shell and scallops, then the shrimp, then peas and red bell pepper.  After it was simmered and thickened (I had to add a little water at one point) I served it over the penne with some parsley sprinkled on top.  It makes a nice change although I do eat a fair amount of fish and seafood.



Hi Sandi,  Congratulations on getting rid of those pounds.  I'm sorry that work is off to a rough start.  When do you head home for Christmas?  and how long will you be home for Christmas?

Hi Karrie,  I hope you've had a good day and a nice visit with your dad.  I'm sure he appreciates the cake and the company.  Sometimes we get so busy we forget that the people are more important in our lives than the plans that we make.  You'll be glad that you haven't made that mistake.  I have been feeling much happier and I'm sure thankful for it because I was quite "down" for a few weeks.  Karrie I answered your breakfast question in my previous post.

Hi Annie,  It sounds like you've really enjoyed your time off.  I enjoy shopping with my daughter and dil and it's a great chance to visit and catch up too.  I sometimes think I suffer from SAD too but I find forcing myself out the door and spending time with people really does help me.  About the middle of February I start coming back to life again.  I've never lived anywhere warmer than this although I've lived several different places in this province including 14 years "up north" and I lived in a city on the Alberta/Saskatchewan border for a couple of years.  We put up with the cold but I don't know many people who really like it although some people thoroughly enjoy the winter sports.  I used to X-country ski and I'm thinking about doing it again this winter.  I need to get the bindings on my skis changed since I can't get boots for the ones that I have anymore.  I have a natural gas furnace with central air and my car has a block heater which gets plugged in when it's too cold outside.  Unfortunately I do not have a wood stove/fireplace in this house so if the hydro went out for long in the winter it would be a serious problem.  Every year a few people freeze to death here.  Sometimes because they were drunk and passed out before they got safely inside, sometimes because their car got stuck somewhere and they tried to walk or weren't found in time.  Most people have cell phones and emergency gear in their vehicles to keep them warm until they can be rescued.  At this time of year we worry about people going through the ice.  We got a huge amount of snow but it's covered the lakes and rivers before the ice formed and it's not frozen yet although people on snowmobiles, etc. start taking chances.
